Description
A refreshing, 3-step summer drink made with fresh watermelon, mint, and lime. This simple, naturally gluten-free and vegan beverage is perfect for hot days and pool parties.

- 6–7 cups cubed seedless watermelon (about 1.5 kg)
- 1 cup packed fresh mint leaves (about 30g)
- 3–4 tablespoons freshly squeezed lime juice
- 2–3 cups cold filtered water
- 2–3 tablespoons agave nectar (or honey)
- Pinch of salt
- Ice cubes for serving
- Optional: Sparkling water, chili powder, or vodka
Instructions
- Wash the watermelon, cut it in half, remove the rind, and cut the flesh into 1-inch cubes to yield about 6-7 cups.
- Add the watermelon cubes, fresh mint leaves, and 2 cups of cold water to a high-speed blender.
- Blend on high speed for 1-2 minutes until the mixture is completely smooth and vibrant pink.
- Set a fine-mesh strainer over a large bowl or pitcher and pour the blended mixture through it.
- Use a spoon to press down on the pulp to extract as much liquid as possible, then discard the pulp.
- Taste the liquid and stir in the lime juice, agave nectar, and pinch of salt.
- Adjust sweetness or tartness by adding more agave or lime juice as needed.
- Pour into a pitcher, add ice, and refrigerate for at least 30 minutes to let flavors meld.
- Serve over ice in tall glasses, garnished with fresh mint and a lime wedge.
Notes
For a smoother texture, strain the mixture twice. If using frozen watermelon, you can blend it straight from frozen for a thicker, colder drink without needing ice cubes. The drink tastes even better the next day after flavors have melded. Store leftovers in an airtight container in the refrigerator for up to 3 days.
