Description

A refreshing, 3-step summer drink made with fresh watermelon, mint, and lime. This simple, naturally gluten-free and vegan beverage is perfect for hot days and pool parties.


Ingredients

  • 67 cups cubed seedless watermelon (about 1.5 kg)
  • 1 cup packed fresh mint leaves (about 30g)
  • 34 tablespoons freshly squeezed lime juice
  • 23 cups cold filtered water
  • 23 tablespoons agave nectar (or honey)
  • Pinch of salt
  • Ice cubes for serving
  • Optional: Sparkling water, chili powder, or vodka

Instructions

  1. Wash the watermelon, cut it in half, remove the rind, and cut the flesh into 1-inch cubes to yield about 6-7 cups.
  2. Add the watermelon cubes, fresh mint leaves, and 2 cups of cold water to a high-speed blender.
  3. Blend on high speed for 1-2 minutes until the mixture is completely smooth and vibrant pink.
  4. Set a fine-mesh strainer over a large bowl or pitcher and pour the blended mixture through it.
  5. Use a spoon to press down on the pulp to extract as much liquid as possible, then discard the pulp.
  6. Taste the liquid and stir in the lime juice, agave nectar, and pinch of salt.
  7. Adjust sweetness or tartness by adding more agave or lime juice as needed.
  8. Pour into a pitcher, add ice, and refrigerate for at least 30 minutes to let flavors meld.
  9. Serve over ice in tall glasses, garnished with fresh mint and a lime wedge.

Notes

For a smoother texture, strain the mixture twice. If using frozen watermelon, you can blend it straight from frozen for a thicker, colder drink without needing ice cubes. The drink tastes even better the next day after flavors have melded. Store leftovers in an airtight container in the refrigerator for up to 3 days.
