A quick and easy 20-minute sheet pan dinner featuring salmon glazed with a sticky honey garlic sauce and roasted vegetables, perfect for busy weeknights with minimal cleanup.
Ingredients
- 4 salmon fillets (about 6 oz / 170g each), skin-on preferred
- 3 cups broccoli florets (about 300g)
- 2 large carrots, sliced (about 150g)
- 3 tablespoons olive oil (45ml), extra virgin recommended
- 4 cloves garlic, minced (about 2 teaspoons)
- 1/4 cup honey (85g)
- 3 tablespoons soy sauce (45ml), low-sodium preferred
- 1 tablespoon lemon juice (15ml)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Optional add-ins: 1 bunch asparagus, trimmed; 1 cup cherry tomatoes (150g)
Instructions
- Preheat oven to 400°F (200°C). Chop broccoli into bite-sized florets and slice carrots into thin rounds. Toss veggies in a large bowl with 2 tablespoons olive oil, salt, and pepper. Spread evenly on a lined sheet pan.
- In a small bowl, whisk together minced garlic, honey, soy sauce, lemon juice, red pepper flakes (if using), and remaining 1 tablespoon olive oil. Adjust sweetness or brightness to taste.
- Roast the veggies in the oven for 10 minutes to give carrots a head start.
- Pat salmon fillets dry with paper towels and season lightly with salt and pepper. Remove sheet pan from oven, push veggies to the sides, and place salmon skin-side down in the center.
- Brush each salmon fillet generously with the honey garlic glaze. Return to oven and roast for 10-12 minutes until salmon flakes easily but remains moist.
- Optionally brush salmon with extra glaze before serving. Garnish with fresh parsley or green onions. Serve straight from the sheet pan or transfer to plates with a squeeze of fresh lemon.
