Description

Ingredients

  • 6 cups chicken broth (low-sodium preferred)
  • 1 cup wild rice
  • 1 medium yellow onion, diced
  • 3 medium carrots, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 3 cups shredded chicken (rotisserie or cooked)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Optional: 1 cup sliced mushrooms, 2 cups fresh spinach, 1 cup frozen peas

Instructions

  1. Set Instant Pot to ‘Saute’ mode. Melt butter and sauté onion, carrots, and celery for 5-7 minutes until softened. Add garlic in the last minute.
  2. Stir in wild rice, dried thyme, and bay leaf. Pour in chicken broth and scrape the bottom of the pot to release any browned bits.
  3. Secure the lid, set valve to ‘Sealing’, and pressure cook on High for 20 minutes.
  4. Allow pressure to release naturally for 10 minutes, then vent remaining pressure.
  5. Remove bay leaf. Whisk heavy cream and flour together to create a slurry.
  6. Stir the slurry into the soup. Set Instant Pot to ‘Saute’ (Low/Medium) and simmer for 5-7 minutes until thickened.
  7. Stir in shredded chicken and heat through for 2-3 minutes. Adjust seasoning with salt and pepper.
  8. Serve immediately with crusty bread or salad.

Notes

Ensure the bottom of the pot is scraped clean before pressure cooking to avoid a ‘Burn’ warning. Wild rice takes longer to cook than white rice, so 20 minutes is ideal for a chewy texture. The soup will thicken as it cools; add broth when reheating if needed.
