Ingredients
- 1 ½ cups (150g) blanched almond flour
- ¼ cup (25g) unsweetened Dutch-process cocoa powder
- ⅔ cup (130g) erythritol or your favorite keto sweetener
- 3 large eggs, room temperature
- ⅓ cup (75g) unsalted butter, melted (or coconut oil for dairy-free)
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon fine sea salt
- Optional add-ins:
- ½ cup (60g) chopped walnuts or pecans
- ½ cup (90g) sugar-free chocolate chips
- Flaky sea salt for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt until no lumps remain.
- In a separate bowl, beat the eggs lightly. Add melted butter (cooled) and vanilla extract, mixing until smooth and well combined.
- Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined. Do not overmix.
- Fold in optional nuts and sugar-free chocolate chips if using.
- Spread the batter evenly in the prepared pan. Bake for 20-25 minutes, checking at 20 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
- Let the brownies cool completely in the pan on a wire rack. Use the parchment paper overhang to lift them out, then slice into 12 squares.
