- 2 ribeye or New York strip steaks, about 8 oz (225g) each, 1-inch thick
- 1 bunch asparagus, about 1 lb (450g), woody ends trimmed
- 4 tablespoons (60g) unsalted butter, softened
- 4 cloves garlic, minced (about 1 tablespoon)
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 2 tablespoons (30ml) olive oil or avocado oil
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: Lemon wedges for serving
Instructions
- Pat the steaks dry with paper towels and season generously with salt and pepper on both sides. Trim the woody ends off the asparagus and set aside.
- In a small bowl, mix softened butter with minced garlic and fresh thyme. Set aside to meld flavors.
- Heat a cast iron or heavy-bottomed skillet over medium-high heat and add olive oil. When shimmering, add the steaks. Sear without moving for 3-4 minutes until a deep crust forms. Flip and sear the other side 3-4 minutes for medium-rare. Sear edges briefly with tongs. Remove steaks and tent loosely with foil to rest.
- Reduce heat to medium. Add 1 tablespoon butter to the pan, then toss in the asparagus. Season with salt and pepper. Cook, stirring occasionally, until tender-crisp and lightly charred, about 4 minutes.
- Lower heat to medium-low. Add the garlic butter mixture to the pan with asparagus and stir gently to coat. Let the butter melt into a fragrant sauce.
- Slice the steak against the grain and plate with the garlic butter asparagus. Optionally, squeeze fresh lemon juice over the top before serving.
Notes
Let the steak rest 5-7 minutes after cooking to keep juices locked in. Add garlic butter only at the end on medium-low heat to avoid burning the garlic. Use a meat thermometer for best doneness results (130°F for medium-rare). Trim asparagus ends well to avoid woody texture. For dairy-free, substitute butter with ghee or coconut oil.
