Juicy, sweet shrimp marinated in a rich garlic butter and lemon mixture, grilled to perfection for a smoky, restaurant-quality appetizer that is ready in under 30 minutes.

- 2 pounds (900g) Jumbo Shrimp (21–25 count), deveined and peeled
- ½ cup (113g) Unsalted Butter
- 6–8 cloves Garlic, minced
- ¼ cup (60ml) Fresh Lemon Juice
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Lemon Zest
- ½ teaspoon Red Pepper Flakes (optional)
- 1 teaspoon Dried Parsley
- Salt and Black Pepper to taste
- Lemon Wedges for serving
- Fresh Parsley, chopped for garnish
Instructions
- Rinse shrimp under cold water and pat completely dry with paper towels. Place in a large bowl.
- Melt butter in a small saucepan or microwave-safe bowl. Stir in minced garlic, lemon juice, olive oil, red pepper flakes, dried parsley, lemon zest, salt, and pepper. Whisk until smooth and emulsified.
- Pour the warm (not hot) marinade over the shrimp. Toss gently to coat. Cover and refrigerate for 15-30 minutes. Do not exceed 30 minutes to avoid mushy texture.
- Preheat grill to medium-high heat (400°F / 200°C). If using wooden skewers, soak them in water for at least 30 minutes.
- Thread 4-5 shrimp onto each skewer in a zigzag pattern (head to tail, then tail to head) to keep them flat.
- Lightly oil the grill grates. Place skewers perpendicular to the grates.
- Grill for 2 minutes on the first side until pink and opaque. Flip and cook for another 2-3 minutes until slightly charred and firm but springy.
- While grilling, keep remaining marinade warm. Brush shrimp with extra melted butter or reserved marinade for gloss.
- Transfer to a serving platter. Garnish with fresh chopped parsley and lemon wedges. Serve hot.
Notes
Do not marinate shrimp for more than 30 minutes as the acid will cook them. Thread shrimp in a zigzag pattern to prevent curling. Ensure grill grates are clean and oiled to prevent sticking. Leftovers do not keep well; refrigerate for up to 2 days and reheat gently in a skillet.
