A quick and flavorful creamy sun-dried tomato chicken recipe that feels fancy but is easy to make on weeknights. This dish features tender chicken breasts in a rich, tangy, and silky sauce that has become a family favorite.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 pounds / 680g)
- 3 tablespoons olive oil (extra virgin recommended)
- 2 tablespoons butter
- 4 cloves garlic, minced (about 1 tablespoon)
- ½ cup chopped sun-dried tomatoes (about 70g), jarred in oil, drained with 1 tablespoon oil reserved
- 1 cup chicken broth (240ml), low-sodium preferred
- 1 cup heavy cream (240ml), full-fat
- ½ cup freshly grated Parmesan cheese (about 50g)
- 1 teaspoon Italian seasoning (or dried basil, oregano, thyme mix)
- ¼ teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- A handful of fresh basil, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper. Set aside.
- Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken breasts and cook undisturbed for 4-5 minutes per side until golden brown and cooked through. If thick, cover and reduce heat to medium to finish cooking. Remove chicken and set aside.
- Lower heat to medium. Add remaining 1 tablespoon olive oil and 1 tablespoon butter to skillet. Add minced garlic and chopped sun-dried tomatoes. Stir constantly for about 2 minutes without browning the garlic.
- Pour in chicken broth and scrape up browned bits from the pan. Simmer for 2 minutes to reduce slightly.
- Stir in heavy cream, Italian seasoning, and red pepper flakes. Let sauce bubble gently for 3-4 minutes until thick enough to coat the back of a spoon.
- Remove skillet from heat and gradually stir in freshly grated Parmesan cheese until sauce is silky. Add splash of broth or cream if sauce is too thick.
- Return chicken breasts to skillet and spoon sauce over them. Warm together for 1-2 minutes.
- Sprinkle with fresh basil before serving.
Notes
Dry chicken breasts before cooking to get a golden crust. Reserve 1 tablespoon of sun-dried tomato oil for extra flavor. Simmer cream sauce gently to avoid curdling. Use freshly grated Parmesan for best texture. Sauce thickens when chilled; reheat gently with cream or broth. Can add fresh spinach at the end for greens. For dairy-free, substitute coconut cream and nutritional yeast.
