Ingredients

  • 2 pounds large shrimp, peeled and deveined
  • 2 cups cherry or grape tomatoes
  • 8 ounces block feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 68 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 large lemon (zest and juice)
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • Crusty bread for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Thaw shrimp if frozen, then pat extremely dry with paper towels. Toss with salt, pepper, and half the lemon juice.
  3. Halve tomatoes, crumble feta, mince garlic, zest lemon, and chop parsley.
  4. Heat olive oil in a 12-inch oven-safe skillet over medium-high heat.
  5. Sear shrimp in a single layer for 2 minutes per side until pink. Remove shrimp and set aside.
  6. Reduce heat to medium. Add tomatoes to the skillet and cook undisturbed for 2-3 minutes until charred.
  7. Add garlic, oregano, and red pepper flakes; stir for 1 minute until fragrant.
  8. Scatter feta cheese over tomatoes and drizzle with more oil if needed.
  9. Bake for 10-12 minutes until cheese is golden and tomatoes have burst.
  10. Remove from oven, return shrimp to the skillet, and sprinkle with lemon zest and parsley.
  11. Serve immediately with crusty bread.

Notes

Pat shrimp dry to ensure proper searing. Do not overcook shrimp initially as they finish cooking in the oven. Use block feta for better melting. Serve with crusty bread to soak up the sauce. Leftovers can be refrigerated for up to 3 days; reheat gently on stovetop.
