Ingredients

  • 1 scoop Vanilla Protein Powder (whey or plant-based)
  • 1012 large Medjool Dates, pitted
  • ½ cup Unsweetened Shredded Coconut
  • 2 tablespoons Fresh Lemon Juice
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Honey (or Maple Syrup for vegan)
  • 1 tablespoon Coconut Oil, melted
  • 1 pinch Salt
  • Optional: ¼ cup Chopped Almonds
  • Optional: 2 tablespoons White Chocolate Chips

Instructions

  1. If dates are dry, pit them and soak in warm water for 10 minutes, then drain and pat dry.
  2. Add rolled oats and protein powder to a food processor. Pulse until oats are broken down into a coarse meal, then transfer to a medium bowl.
  3. In a small bowl, whisk together melted coconut oil, honey, fresh lemon juice, lemon zest, and salt until smooth.
  4. Add pitted dates and shredded coconut to the food processor with the oat mixture. Pulse until dates are finely chopped.
  5. Pour the wet mixture into the processor and pulse again, scraping down sides as needed, until the mixture clumps together when pinched.
  6. Line a baking sheet with parchment paper. Scoop about 1 tablespoon of mixture and roll between palms to form a ball. Repeat to make 15-18 bites.
  7. Place the baking sheet in the refrigerator for at least 30 minutes to firm up before serving.

Notes

Do not use quick oats as they turn to mush. Ensure dates are soft; soak if necessary. Keep bites refrigerated as coconut oil melts at room temperature. Store in an airtight container with parchment paper between layers to prevent sticking.
