  • 1 pound (450g) Spaghetti or Linguine
  • 1.5 pounds (680g) Large Shrimp, peeled and deveined
  • 3 tablespoons (45g) Unsalted Butter
  • 68 cloves Garlic, minced
  • ½ cup (120ml) White Wine (Pinot Grigio or Sauvignon Blanc)
  • 1 cup (240ml) Chicken Broth (low-sodium)
  • ½ cup (120ml) Heavy Cream (optional)
  • 1 large Lemon (zest and juice)
  • ½ cup (50g) Parmesan Cheese, freshly grated
  • ½ teaspoon Red Pepper Flakes
  • ¼ cup Fresh Parsley, chopped
  • Salt and Black Pepper to taste

Instructions

  1. Prep ingredients: Mince garlic, zest lemon, chop parsley, and measure wine and broth. If using frozen shrimp, thaw in cold water and pat completely dry with paper towels.
  2. Heat butter in a large skillet over medium-high heat. Add shrimp in a single layer and sear for 1-2 minutes per side until pink. Remove shrimp to a plate and set aside.
  3. Reduce heat to medium. Add minced garlic and red pepper flakes to the same pan. Stir constantly for about 60 seconds until fragrant and golden, being careful not to burn.
  4. Pour in white wine and simmer for 1 minute. Add chicken broth and uncooked pasta. Stir to combine.
  5. Reduce heat to medium-low, cover with a lid slightly ajar, and simmer for 8-10 minutes, stirring every 2-3 minutes, until pasta is al dente and liquid is absorbed.
  6. Remove pot from heat. Stir in heavy cream (if using), lemon zest, and half of the Parmesan cheese until melted and smooth.
  7. Return cooked shrimp to the pot. Add lemon juice and chopped parsley. Toss gently to combine.
  8. Taste and adjust salt and pepper. Serve immediately topped with extra Parmesan and lemon wedges.

Notes

Pat shrimp dry to ensure they sear rather than steam. Do not overcook shrimp; remove early and add back at the end. Use starchy pasta water to thin sauce if needed. For a lighter version, skip the cream and use more pasta water. For gluten-free, swap spaghetti for GF pasta. For dairy-free, use olive oil and coconut cream.
