Rich, fudgy, and moist Paleo brownies made with just four simple ingredients: coconut flour, dark chocolate, eggs, and almond butter. Ready in 20 minutes and completely gluten-free.

- 1 cup (100g) fine-milled coconut flour
- 1 cup (170g) high-quality dark chocolate chunks (70% cocoa or higher)
- 4 large eggs, room temperature
- 1/2 cup (120g) natural almond butter
- 1 teaspoon vanilla extract (optional)
- Sea salt flakes (for topping)
- 1/2 cup walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the parchment.
- In a large bowl, whisk the eggs vigorously until pale and frothy (1-2 minutes).
- Stir in the almond butter until fully combined with the eggs. Add vanilla extract if using. The mixture should be smooth and creamy.
- Sprinkle the coconut flour over the wet mixture gradually. Stir gently with a spatula. The batter will look thick and pasty.
- Let the batter sit for 5 minutes to allow the coconut flour to hydrate completely.
- Fold in the dark chocolate chunks, reserving about 1/4 cup for topping. Mix gently until distributed. The batter should be very thick, like peanut butter.
- Spread the batter into the prepared pan. Wet your hands or spatula with water to help flatten it out. Sprinkle the reserved chocolate chunks on top.
- Bake for 18-20 minutes. The edges should be set and pulling slightly away from the pan, but the center should still look a bit soft.
- Let the brownies cool in the pan for at least 15 minutes before lifting them out using the parchment paper.
- Slice into squares and dust with sea salt flakes if desired. Serve warm or chilled.
Notes
Do not substitute coconut flour with almond flour as they absorb liquid differently. The 5-minute rest is crucial for hydration. Do not overbake, as they continue to set while cooling. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
