Peanut Butter Chocolate Chip Cookie Bars

  • Author: SALY
  • Total Time: 37-40 minutes
  • Yield: 12 servings 1x

Description

Easy homemade peanut butter chocolate chip cookie bars made with simple pantry ingredients, offering a soft, chewy texture and rich peanut butter flavor.

Ingredients

Scale
  • 1 cup creamy peanut butter (240g)
  • 3/4 cup granulated sugar (150g)
  • 1/2 cup packed brown sugar (110g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (120g)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips (135g)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Stir until smooth and creamy.
  3. Add the egg and vanilla extract to the mixture and mix well until fully incorporated.
  4. Sprinkle in the flour, baking soda, and salt. Stir gently until just combined, being careful not to overmix.
  5. Fold in the chocolate chips, reserving a few to sprinkle on top if desired.
  6. Spread the dough evenly in the prepared pan and smooth the top. Sprinkle reserved chocolate chips on top.
  7. Bake for 22 to 25 minutes, until edges are golden and the center is set but still soft (a toothpick inserted should come out with a few moist crumbs).
  8. Let the bars cool completely in the pan on a wire rack. Use the parchment overhang to lift out and slice into 12 squares.

Notes

[‘Use parchment paper to make cleanup and slicing easier.’, ‘Start checking bars at 20 minutes to avoid overbaking and drying out.’, ‘Do not overmix the dough to keep bars tender and chewy.’, ‘Room temperature egg helps with mixing; microwave for 10 seconds if needed.’, ‘Sprinkle extra chocolate chips on top before baking for a melty chocolate surface.’, ‘Store bars in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.’, ‘Warm bars in the microwave for 15-20 seconds to restore chewiness if they dry out.’]
