  • Author: SALY
  • Total Time: 40 minutes
  • Yield: 12 servings 1x

Description

Moist, spiced pumpkin muffins topped with a crunchy cinnamon-sugar streusel and a sweet maple glaze. This budget-friendly, kid-approved recipe is perfect for meal prep and uses simple pantry staples.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup pumpkin puree
  • ½ cup vegetable oil
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 ½ tsp pumpkin pie spice
  • ½ tsp salt
  • ½ cup all-purpose flour (for streusel)
  • ½ cup brown sugar, packed (for streusel)
  • 1 tsp cinnamon (for streusel)
  • 3 tablespoons vegetable oil or melted butter (for streusel)
  • ¼ cup real maple syrup (for glaze)
  • 1 cup powdered sugar, sifted (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together 2 ½ cups flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a separate bowl, whisk pumpkin puree, granulated sugar, eggs, and vegetable oil until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined; do not overmix.
  5. In a small bowl, mix ½ cup flour, brown sugar, cinnamon, and 3 tablespoons oil until it resembles coarse crumbs.
  6. Fill muffin cups about ¾ full with batter and sprinkle generously with streusel topping.
  7. Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Whisk powdered sugar, maple syrup, and milk until smooth, then drizzle over cooled muffins.

Notes

Do not overmix the batter to avoid tough muffins. For meal prep, freeze muffins plain (without glaze) and glaze them right before eating to prevent sogginess. Canned pumpkin puree is recommended over fresh for consistent moisture.
