Raspberry White Chocolate Blondies

Description

These blondies are tender and chewy with gooey pockets of melted white chocolate and bright bursts of tart raspberries. A quick and foolproof dessert perfect for any occasion.


Ingredients

  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup packed (150g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour, sifted
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 6 ounces (170g) white chocolate, chopped into chunks
  • 1 cup (125g) fresh or frozen raspberries

Instructions

  1. Melt the butter in a small saucepan or microwave and let it cool slightly until warm but not hot. In a mixing bowl, whisk together the brown sugar and granulated sugar. Pour in the melted butter and whisk until combined and smooth.
  2. Crack in the egg and add vanilla extract. Whisk vigorously until the mixture is creamy and slightly thickened.
  3. In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Slowly add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Do not overmix.
  4. Gently fold in the chopped white chocolate chunks and raspberries, being careful not to break the berries too much.
  5. Pour the batter into a prepared 8×8-inch baking pan and spread evenly. Bake at 350°F (175°C) for 25 to 30 minutes until edges are golden brown and center is set but still soft. Let cool completely before slicing into squares.

Notes

Use a sharp knife warmed under hot water to cut clean squares without crumbling. Do not overbake to maintain gooey texture. If using frozen raspberries, fold them in straight from frozen and optionally toss in a tablespoon of flour to reduce bleeding. Store leftovers in an airtight container at room temperature for up to 3 days. Reheat briefly to restore gooeyness. Freezing is not recommended as raspberries get mushy.
