  • 2 tablespoons extra virgin olive oil
  • ½ cup fig jam or preserves
  • 4 ounces goat cheese (chèvre), crumbled
  • 1 cup low-moisture mozzarella cheese, shredded
  • 34 ounces prosciutto di Parma, thinly sliced
  • ¼ cup hot honey
  • 2 cups fresh arugula
  • 1 tablespoon fresh thyme leaves
  • Pinch of sea salt flakes
  • Lemon juice (for tossing arugula)

Instructions

  1. Preheat oven to 425°F (220°C). If using a baking sheet, place it in the oven to preheat.
  2. Roll out the flatbread dough on a lightly floured surface to about ¼ inch thickness.
  3. Transfer dough to the baking sheet or parchment paper. Brush lightly with olive oil to create a barrier against moisture.
  4. Spread the fig jam evenly over the dough, leaving a ½-inch border for the crust.
  5. Scatter the crumbled goat cheese and shredded mozzarella over the jam.
  6. Lay the prosciutto slices over the cheese.
  7. Bake for 10-12 minutes until the crust is golden brown and the cheese is bubbly and slightly browned.
  8. While baking, warm the hot honey in a small saucepan over low heat or microwave for 15 seconds.
  9. Remove flatbread from oven and immediately drizzle with warm hot honey.
  10. Sprinkle with fresh thyme leaves and sea salt flakes.
  11. Let cool for 2 minutes, then top with arugula tossed with lemon juice and olive oil.
  12. Cut into slices and serve immediately.

Notes

Do not microwave the flatbread when reheating as it will become chewy; use an oven or toaster oven instead. Ensure you brush the dough with olive oil before adding jam to prevent sogginess. Use low-moisture mozzarella to avoid a wet crust. Add arugula only after baking to keep it fresh and peppery.
