Ingredients
- 1 bunch asparagus (about 1 pound / 450g), fresh with firm stalks and tight tips
- 2 tablespoons extra virgin olive oil (30ml)
- 3 cloves garlic, minced (about 1 tablespoon)
- ½ cup freshly grated Parmesan cheese (50g)
- ½ teaspoon kosher salt
- Freshly ground black pepper, to taste
- Optional: 1 teaspoon lemon zest
- Optional: ¼ teaspoon red pepper flakes
Instructions
- Rinse asparagus under cold water and pat dry. Snap or cut off the tough woody ends (about 1 inch). Trim thicker stalks in half lengthwise for even roasting.
- In a large mixing bowl, drizzle asparagus with olive oil. Add minced garlic, salt, and pepper. Toss to coat evenly.
- Spread asparagus in a single layer on a rimmed baking sheet, ensuring tips are not crowded.
- Roast in a preheated oven at 425°F (220°C) for 12-15 minutes, flipping halfway through, until tips are golden brown and crispy and stalks are tender with a slight snap.
- Remove from oven and immediately sprinkle freshly grated Parmesan over hot asparagus. Add lemon zest and red pepper flakes if using.
- Serve hot immediately as a side dish.
