  • 2 teaspoons vanilla extract
  • 1 teaspoon sea salt
  • 1 cup banana chips or crushed vanilla wafers (optional)

Instructions

  1. Make the Salted Caramel Sauce: In a medium saucepan over medium heat, melt 1 cup granulated sugar, stirring constantly until it melts into a smooth amber liquid. Remove from heat and stir in 4 tablespoons unsalted butter until incorporated. Whisk in 1 teaspoon sea salt and 1 cup heavy cream slowly until smooth. Set aside to cool.
  2. Prepare the Pudding Base: In the same saucepan, melt 4 tablespoons butter over medium heat. Sprinkle in ¼ cup all-purpose flour and whisk constantly to form a roux. Cook for 2 minutes until golden. Gradually whisk in 3 cups whole milk, stirring until thickened and boiling gently (about 5-6 minutes). Remove from heat and stir in 2 teaspoons vanilla extract and the salted caramel sauce.
  3. Layer the Banana Pudding: Peel and mash bananas with some chunks remaining. In a serving dish or ramekins, layer pudding, mashed bananas, and optional crushed wafers or banana chips. Repeat layers, finishing with pudding on top.
  4. Chill and Whip Cream: Cover pudding and chill at least 2 hours or overnight. Before serving, whip remaining heavy cream until soft peaks form and spread over pudding. Optionally sprinkle sea salt or drizzle caramel on top.
  5. Serve chilled and enjoy.
