  • 3 tablespoons soy sauce or coconut aminos
  • 1 tablespoon dark soy sauce
  • 1 tablespoon arrowroot starch or cornstarch
  • 1 cup chicken broth (low-sodium)
  • 3 tablespoons packed brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 teaspoon sriracha or chili flakes (optional)
  • 3 cups broccoli florets
  • 4 green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • Jasmine rice, for serving

Instructions

  1. Pat the flank steak dry and slice it thinly against the grain into bite-sized strips. Place in a large bowl.
  2. Add 3 tablespoons soy sauce, 1 tablespoon dark soy sauce, and 1 tablespoon arrowroot starch to the beef. Toss to coat evenly and let marinate for at least 10 minutes (or up to 4 hours).
  3. In a separate bowl, whisk together chicken broth, brown sugar, rice vinegar, grated ginger, minced garlic, and sriracha until the sugar is dissolved.
  4. Transfer the marinated beef and juices to the slow cooker. Pour the sauce mixture over the beef and stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the beef is tender.
  6. About 30 minutes before serving, uncover the slow cooker and add the broccoli florets. Stir to combine and cover. Cook on HIGH for 30 minutes until broccoli is bright green and crisp-tender.
  7. If the sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water to create a slurry. Stir into the slow cooker and cook on HIGH for 5-10 minutes until the sauce is glossy and thickened.
  8. Serve the beef and broccoli over steamed jasmine rice. Garnish with sliced green onions and toasted sesame seeds.

Notes

Slice beef against the grain for maximum tenderness. Add broccoli in the last 30 minutes to prevent mushiness. Use a cornstarch slurry to thicken the sauce smoothly. This recipe does not freeze well due to the broccoli texture.
