  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Pat pork tenderloins dry with paper towels. Trim off any excess fat or silver skin. If necessary, cut tenderloins in half to fit the slow cooker.
  2. Heat neutral oil in a large skillet over medium-high heat. Sear pork tenderloins for 2-3 minutes on each side until browned. Transfer seared pork to the slow cooker.
  3. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, grated ginger, and red pepper flakes. Pour over the pork in the slow cooker and coat evenly.
  4. Cover and cook on high for 3-4 hours or low for 6-7 hours, until internal temperature reaches 145°F (63°C).
  5. Remove pork from slow cooker and place on a cutting board. Tent loosely with foil to keep warm.
  6. Pour liquid from the slow cooker into a small saucepan. Bring to a simmer. Whisk cornstarch and water together to make a slurry, then whisk into the simmering liquid. Cook for 1-2 minutes until thickened.
  7. Slice pork into 1/2-inch medallions. Arrange on a serving platter and drizzle with the thickened glaze. Garnish with green onions and sesame seeds if desired.

Notes

Do not skip searing the pork for better flavor and color. Use a meat thermometer to ensure pork reaches 145°F. Reserve some glaze before cooking to drizzle over sliced meat for brighter flavor. Let pork rest for 5 minutes after slicing to redistribute juices.
