  • 45 pounds pork shoulder (1.82.3 kg), bone-in preferred
  • 1 large onion, sliced (about 200g)
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 2 tablespoons brown sugar
  • 1/4 cup apple cider vinegar (60 ml)
  • 1 cup ketchup (240 ml)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon liquid smoke (optional)

Instructions

  1. Slice the onion into thick rings and place them at the bottom of the slow cooker.
  2. Trim excess fat from the pork shoulder if desired, leaving some for flavor. Pat the pork dry with paper towels.
  3. Mix salt, black pepper, smoked paprika, chili powder, and brown sugar in a small bowl. Rub this spice mix all over the pork shoulder.
  4. In a mixing bowl, whisk together ketchup, apple cider vinegar, Worcestershire sauce, mustard, minced garlic, and liquid smoke if using. Set aside.
  5. Place the seasoned pork on top of the onions in the slow cooker. Pour the BBQ glaze evenly over the pork.
  6. Cover and cook on low for 8 hours, or until the pork is tender and falls apart easily.
  7. Transfer the pork to a large plate or bowl and shred it using two forks or tongs.
  8. Return the shredded pork to the slow cooker and mix it with the onions and juices. Let it soak up the glaze for 10 minutes on warm.
  9. Serve on toasted buns, over rice, or in soft tortillas with optional toppings like crunchy slaw or pickles.

Notes

For extra smoky flavor, sear the pork in a cast iron skillet before slow cooking (optional). If the sauce is too thin after cooking, remove the pork and simmer the sauce on the stove to thicken before mixing back in. Use low heat to avoid drying out the pork. Leftovers keep well in the fridge for up to 4 days and freeze for up to 3 months.
