Ingredients

Instructions
- Prep ingredients: Dice sweet potatoes into ½-inch cubes, dice onion, mince garlic, and drain/rinse beans.
- Heat a 12-inch cast iron skillet over medium-high heat (or over hot coals on a grill/campfire). Add olive oil and let it shimmer.
