Ingredients

  • 1 cup all-purpose flour (125g)
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 2 medium apples, peeled and diced (about 300g)
  • ½ cup packed brown sugar (100g)
  • ½ cup unsweetened applesauce (120g)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 6 tablespoons butter, melted and slightly cooled (85g)

Instructions

  1. Preheat oven to 350°F (175°C). Peel and dice apples into ¼ inch cubes.
  2. In a large bowl, whisk together rolled oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk egg, brown sugar, unsweetened applesauce, vanilla extract, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and fold gently until just combined. Fold in diced apples.
  5. Grease a 9×9-inch baking pan or line with parchment paper. Spread batter evenly in the pan.
  6. Bake for 25 to 30 minutes until top is golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  7. Let bars cool completely on a wire rack before slicing into 12 squares.
  8. Store in an airtight container.
