  • 12 tablespoons milk or cream
  • 1/4 cup extra rainbow sprinkles for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides, and grease lightly.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 3 minutes with a mixer).
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Fold in the 1/2 cup of rainbow sprinkles by hand. Spread the dough evenly into the prepared pan.
  7. Bake for 20-25 minutes, or until edges are lightly golden and the center is set but still slightly soft.
  8. Let the bars cool completely in the pan on a wire rack (at least 30 minutes).
  9. While bars cool, beat the cream cheese and 1/4 cup butter until smooth. Add powdered sugar, vanilla, and milk if needed, beating until fluffy.
  10. Spread frosting evenly over cooled bars. Immediately sprinkle remaining 1/4 cup sprinkles over the wet frosting and press gently.
  11. Let frosting set for 10-15 minutes before slicing into squares.
