Description
An elegant, refreshing, and simple 3-ingredient mocktail made with pomegranate juice, sparkling water, and fresh rosemary. Perfect for parties, brunches, or a quick, healthy treat.
Ingredients
- 4 cups (960ml) 100% pure pomegranate juice
- 4 cups (960ml) plain, unsweetened sparkling water
- 4–6 sprigs fresh rosemary
- Ice
- Optional: Lemon or lime wheels for garnish
- Optional: Simple syrup (if juice is very tart)
- Optional: Edible flowers for garnish
Instructions
- Slice lemons or limes into thin wheels for garnish and set aside rosemary sprigs.
- Place 1-2 sprigs of rosemary in the bottom of a large pitcher. Gently press or muddle the leaves to bruise them and release the oils, being careful not to shred them.
- Pour the pomegranate juice into the pitcher over the rosemary. Stir gently and let it sit for a minute to infuse.
- Slowly pour the sparkling water into the pitcher, pouring down the side to preserve the bubbles. Stir very lightly to combine.
- Fill highball or Collins glasses with ice. Pour the mocktail mixture over the ice.
- Garnish with a lemon wheel and a fresh rosemary sprig. Serve immediately.
Notes
Chill all ingredients (juice, sparkling water, glasses) before making to ensure the drink stays cold and bubbly. Do not over-muddle the rosemary as it can make the drink bitter. For make-ahead, store the juice-rosemary mixture in the fridge for up to 3 days, but add sparkling water only right before serving to maintain carbonation.
