  • 2 strips large orange peel (about 4 inches each, from organic oranges)
  • 3 whole cinnamon sticks (6 inches total)
  • 45 whole cloves
  • 1 pod star anise (optional)
  • ½ teaspoon freshly grated nutmeg
  • 2 cardamom pods, lightly crushed
  • 2 tablespoons (30g) unsalted butter
  • ¼ cup (60ml) heavy cream
  • ¼ teaspoon flaky sea salt

Instructions

  1. Wash oranges thoroughly and use a vegetable peeler to remove 2-3 long strips of orange peel, avoiding the white pith. Set aside.
  2. Pour apple juice into a large saucepan. Add brown sugar, cinnamon sticks, cloves, star anise, nutmeg, and cardamom pods. Stir gently to dissolve the sugar.
  3. Place the pot over medium heat to warm the mixture without boiling it.
  4. Once warm and sugar is dissolved, add the orange peels. Reduce heat to low and simmer gently for 10-15 minutes to infuse flavors.
  5. In a small saucepan or microwave-safe bowl, melt butter with heavy cream until warm and combined.
  6. Pour the butter-cream mixture into the cider pot. Stir in sea salt and heat through for 2-3 minutes until slightly thicker and glossier.
  7. Remove from heat. Strain the cider into a pitcher to remove spices if desired, or leave spices in for visual effect.
  8. Ladle into mugs and garnish with fresh orange twist or cinnamon stick. Serve immediately.

Notes

Do not boil the apple juice as it destroys fresh flavor. Use fresh spices for best aroma. The orange peel is key for balancing sweetness; ensure no white pith is included to avoid bitterness. Can be made ahead by storing the spiced juice base (without cream) in the fridge for up to 5 days. Add cream and caramel elements fresh when serving.
