  • ½ cup (60g) powdered sugar
  • ½ cup (160g) strawberry jam

Instructions

  1. Make the Cheesecake Filling: In a small bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. Stir in the strawberry jam until combined but still swirly. Set aside.
  2. Prepare the Cookie Dough: In a large bowl, whisk together flour, baking powder, and salt. In another bowl, cream softened butter and granulated sugar until light and fluffy (3-4 minutes). Add vanilla extract and egg, mixing until combined. Gradually add dry ingredients, mixing just until combined. Do not overmix.
  3. Chill the Dough: Wrap dough in plastic wrap and refrigerate for at least 20 minutes.
  4. Assemble the Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop about 2 tablespoons of dough per cookie. Flatten dough ball slightly, place about 1 teaspoon of cheesecake filling in center, top with another flattened dough ball, and seal edges completely.
