A vibrant, protein-packed cowboy caviar with a zesty lime cilantro dressing. This no-cook recipe is ready in 15 minutes, customizable for various diets, and perfect for tailgating or meal prep.

- 2 cans (15 oz each) black beans, drained and rinsed
- 2 cups yellow corn, thawed if frozen
- 1 large red bell pepper, finely diced
- 1 medium red onion, finely diced
- 1 small jalapeño, seeded and finely diced
- 4 stalks green onions, thinly sliced
- 1/2 cup fresh lime juice (about 3–4 limes)
- 1/3 cup extra virgin olive oil
- 1 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and black pepper to taste
- Optional: 2 ripe avocados, diced
- Optional: 1/2 cup shredded cheddar cheese
Instructions
- Dice the red bell pepper, red onion, and jalapeño into small, uniform pieces. Slice the green onions thinly. Place all vegetables in a large mixing bowl.
- Drain and rinse the black beans and corn thoroughly in a colander to remove excess sodium and canned taste. Shake dry.
- Add the drained beans and corn to the bowl with the vegetables. Toss gently to combine.
- In a small bowl or jar, whisk together the fresh lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper until emulsified.
- Pour the dressing over the vegetable and bean mixture. Toss gently but thoroughly to coat everything evenly. Taste and adjust seasoning as needed.
- Stir in the chopped fresh cilantro.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve with tortilla chips, on top of greens, or over rice. Add avocado just before serving if using.
Notes
Soak diced red onion in cold water for 10 minutes to reduce harshness. Use fresh lime juice only; bottled juice tastes flat. Rinse beans and corn thoroughly. Add avocado right before serving to prevent browning. Tastes better after chilling for a few hours.
