  • 1 cup (226g) unsalted butter
  • 68 cloves fresh garlic, minced finely
  • 1 cup (240ml) heavy cream, warmed
  • 1 teaspoon garlic powder
  • 2 teaspoons kosher salt (plus more for boiling water)
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons chopped chives, optional

Instructions

  1. Peel potatoes and cut into uniform 1.5-inch chunks. Place in a large pot and cover with cold water by two inches. Add 1 tablespoon salt.
  2. Bring water to a boil, then reduce to a simmer. Cook for 15-20 minutes until tender but not falling apart. Drain well and let steam dry for a minute.
  3. While potatoes cook, melt butter in a medium saucepan over medium heat. Stir constantly until foam subsides, color turns golden amber, and it smells like toasted hazelnuts. Remove from heat immediately and scrape brown bits into a bowl.
  4. Add minced garlic to the hot brown butter and stir for 30-60 seconds to infuse flavor without burning.
  5. Warm heavy cream in a small saucepan over low heat until hot but not boiling.
  6. Return drained potatoes to the warm pot. Mash or rice until smooth.
  7. Slowly pour in warm cream while whisking. Add brown butter mixture (including brown bits) and garlic powder. Whisk vigorously until glossy and smooth.
  8. Season with salt and pepper to taste. Fold in chives if using. Serve immediately.

Notes

Keep all ingredients warm to prevent gummy texture. Do not use a food processor as it overworks the starch. For make-ahead, store in fridge for up to 24 hours and reheat gently with added cream. Avoid freezing as texture may become grainy.
