A cozy, plant-based morning drink featuring a homemade blueberry-lavender syrup, frothy oat milk, and strong espresso. This simple 10-minute recipe offers a complex flavor profile without refined sugar.

- 2 cups (480ml) oat milk (preferably barista blend)
- 1 tablespoon (5g) dried culinary lavender buds
- 1/2 cup (75g) fresh or frozen blueberries
- 2 shots (60ml) espresso or strong coffee
- 1/2 cup (120ml) water
- 1–2 teaspoons maple syrup or honey (optional, to taste)
Instructions
- In a small saucepan, combine blueberries, water, and dried lavender. Mash the blueberries slightly with a fork.
- Heat over medium heat until simmering, then reduce to low and simmer gently for 3-4 minutes until blueberries burst and lavender infuses.
- Remove from heat and let steep for 2 minutes. Strain through a fine-mesh sieve if a smooth texture is desired, pressing on berries to extract juice.
- While the syrup steeps, brew espresso or strong coffee.
- Heat oat milk in a saucepan over medium-low until hot (around 150°F/65°C) but not boiling.
- Froth the oat milk using a whisk or handheld frother until creamy with light foam.
- Pour the blueberry-lavender syrup into a mug, add the hot espresso/coffee, and stir gently.
- Pour the frothed oat milk over the top to create layers or stir for a uniform color.
- Garnish with a pinch of dried lavender or fresh blueberries and serve immediately.
Notes
Do not boil the oat milk as it can separate or lose creaminess. Use food-grade dried lavender only; bath lavender is not safe to eat. For a smoother texture, strain the syrup. If using frozen blueberries, add them straight from the freezer for better color release. The syrup can be stored in the fridge for up to 5 days.
