  • 1 cup (200g) dried red lentils
  • 1 can (400ml) full-fat coconut milk
  • 3 cups (720ml) vegetable broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 2 large handfuls (100g) fresh spinach
  • 1 tablespoon lime juice
  • 1 tablespoon oil (coconut or olive oil)
  • Salt and black pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the lentils under cold water in a colander and pick through to remove any debris.
  2. Dice the onion, mince the garlic, and grate the ginger.
  3. Heat oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3-4 minutes until softened.
  4. Add the garlic and ginger, cooking for another minute until fragrant.
  5. Add the curry powder, cumin, and turmeric. Stir and cook for 30-60 seconds to bloom the spices.
  6. Add the rinsed lentils, coconut milk, and vegetable broth. Stir to combine and bring to a boil.
  7. Reduce heat to low, partially cover, and simmer for 20 minutes, stirring occasionally, until lentils are tender and breaking down.
  8. Stir in the fresh spinach and cook for 1-2 minutes until wilted.
  9. Remove from heat and stir in lime juice. Season with salt and black pepper to taste.
  10. Serve hot, garnished with fresh cilantro, coconut cream, or a squeeze of lime.

Notes

Red lentils cook faster than green or brown lentils and create a creamy texture. Rinse lentils thoroughly. Bloom spices in oil for deeper flavor. Add lime juice at the end to preserve brightness. Soup thickens in the fridge; add liquid when reheating. Tastes better the next day.
