  • 2 cans (400ml each) full-fat coconut milk
  • 1 cup (240ml) water
  • ¼ cup (60ml) maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 medium fresh limes
  • Lime zest from 1 lime
  • Lime juice from 2 limes (approx. 3-4 tablespoons)
  • Optional garnish: Extra lime zest, toasted coconut chips, edible flowers

Instructions

  1. Rinse the rice in a colander under cold water until the water runs clear, stirring with fingers to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, maple syrup, vanilla extract, and salt. Stir to dissolve the syrup.
  3. Place the pot over medium-low heat and bring to a gentle simmer.
  4. Reduce heat to low, partially cover the pot, and simmer for 25-30 minutes, stirring every 5 minutes to prevent sticking or burning.
  5. While the rice cooks, wash the limes and zest one lime using a microplane or zester, avoiding the bitter white pith.
  6. Cut the limes in half and squeeze out the juice.
  7. Check the rice after 25 minutes; it should be tender and creamy. If needed, add a splash of water and cook for another 5-10 minutes.
  8. Remove the pot from heat and stir in the lime zest and lime juice.
  9. Taste and adjust sweetness or tartness if desired.
  10. Let the pudding cool for 10-15 minutes until it thickens to a consistency like thick oatmeal.
  11. Serve warm or chilled, topped with extra lime zest or toasted coconut chips if desired.

Notes

Stir frequently to prevent scorching. Use full-fat canned coconut milk for creaminess; do not use light versions or carton beverages. The pudding will thicken as it cools. If it becomes too thick, stir in a splash of milk or water before serving. This recipe is naturally gluten-free and can be made nut-free by substituting oat or soy milk if needed.
