Description

  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 ½ cups (150g) crushed graham crackers or Biscoff cookies
  • 6 tablespoons melted butter

Instructions

  1. Crush graham crackers or Biscoff cookies into fine crumbs using a food processor or a zip-top bag and rolling pin.
  2. Mix the crumbs with melted butter until evenly coated and sticky.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan and chill in the fridge to set.
  4. In a large bowl, beat softened cream cheese with an electric mixer until smooth and creamy (2-3 minutes).
  5. Add Biscoff spread and vanilla extract to the cream cheese and beat until fully combined.
  6. In a separate bowl, whip cold heavy cream with powdered sugar until soft peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture to keep it light and airy.
  8. Pour the filling over the chilled crust and smooth the top with an offset spatula or spoon.
