- 1 pound ground beef (80/20 lean-to-fat ratio)
- 1 cup long-grain white rice (uncooked)
- 1 ½ cups beef broth (low-sodium)
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- ½ cup tomato sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper (or to taste)
- 1 ½ cups shredded cheddar cheese
- Optional: 1 cup diced bell peppers, 1-2 sliced jalapeños, 2 tablespoons fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Line a large 18×13 inch sheet pan with aluminum foil or parchment paper.
- Spread ground beef evenly across the sheet pan and break into small crumbles. Bake for 10 minutes until mostly browned. Remove and drain excess grease if necessary.
- In a large bowl, mix uncooked rice, beef broth, tomato sauce, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper.
- Add diced onion, minced garlic, and the rice mixture to the partially cooked beef on the pan. Toss to combine and spread into a single, even layer.
- Return pan to oven and bake for 25 minutes, or until rice is tender and liquid is mostly absorbed.
- Remove from oven and sprinkle shredded cheddar cheese evenly over the top.
- Return to oven for 3-5 minutes until cheese is melted, bubbly, and slightly golden.
- Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
Do not use instant or pre-cooked rice. Shred your own cheese for better melting. Ensure ingredients are spread in a single layer for even cooking. This dish does not freeze well due to texture changes in the rice and cheese.
